German Red Cabbage, or “Rotkohl,” is a classic dish often served as a side in German cuisine. It’s known for its vibrant color and a perfect balance of sweet and tangy flavors. The cabbage is slowly braised with apples, onions, vinegar, and a touch of sugar, resulting in a dish that is tender and flavorful. Ingredients:

  • 1 medium red cabbage, thinly sliced
  • 2 tablespoons butter
  • 1 large onion, finely chopped
  • 2 apples, peeled, cored, and sliced
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 2 tablespoons sugar (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 2 tablespoons red currant jelly or cranberry sauce (optional)
  • 1 bay leaf

Instructions:

  1. Prepare the Cabbage: Remove the outer leaves of the cabbage, slice it in half, and remove the core. Thinly slice the cabbage and set aside.
  2. Cook the Onion and Apples: In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the apple slices and cook for another 3 minutes.
  3. Add the Cabbage: Stir in the sliced cabbage, coating it well with the butter, onions, and apples.
  4. Season and Simmer: Add the apple cider vinegar, water, sugar, salt, ground cloves, nutmeg, black pepper, and bay leaf. Stir to combine all the ingredients.
  5. Cover and Cook: Reduce the heat to low, cover the pot, and let the cabbage simmer for about 45 minutes to 1 hour, stirring occasionally. The cabbage should become tender, and the flavors should meld together beautifully.
  6. Finish the Dish: If using, stir in the red currant jelly or cranberry sauce during the last 10 minutes of cooking to add a touch of sweetness and enhance the color.
  7. Serve: Remove the bay leaf before serving. German Red Cabbage is best served warm alongside your favorite German sausages, pork, or roasted meats.
