Ingredients:

  • 1 whole chicken (4-5 lbs)
  • 4 tbsp olive oil or melted butter
  • 6 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 lemon, quartered
  • Salt and pepper, to taste
  • 1 onion, quartered
  • 1/2 cup chicken broth or water (for roasting)

Instructions:

  1. Preheat your oven to 425°F (220°C). Place a roasting rack inside a roasting pan.
  2. Pat the chicken dry with paper towels. Rub the entire chicken, including the cavity, with olive oil or melted butter.
  3. In a small bowl, combine the minced garlic, rosemary, thyme, parsley, salt, and pepper. Rub this herb mixture all over the chicken, ensuring even coverage.
  4. Stuff the cavity of the chicken with the lemon quarters and onion pieces.
  5. Tie the legs together with kitchen twine and tuck the wings under the bird to ensure even cooking.
  6. Pour the chicken broth or water into the bottom of the roasting pan to keep the chicken moist while roasting.
  7. Roast the chicken in the preheated oven for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh. Baste the chicken with pan juices halfway through cooking.
