Fried Dandelions Recipe

Ingredients:

  • 2 cups fresh dandelion flowers (only the yellow blossoms, no stems)

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 egg
  • 3/4 cup milk (or water for a lighter batter)
  • Oil for frying (vegetable, canola, or sunflower oil works well)
  • Optional: honey or lemon wedges for serving

Instructions:

  1. Prepare the Dandelions:
    • Gently rinse the dandelion flowers in cold water and pat them dry with a paper towel. Make sure to remove any remaining green parts, as they can add an unwanted bitter taste.
  2. Make the Batter:
    • In a medium bowl, whisk together the flour, cornmeal, salt, black pepper, garlic powder, and paprika.
    • In a separate bowl, beat the egg and then add the milk or water, mixing well.
    • Gradually combine the wet ingredients with the dry ingredients, stirring until you have a smooth batter.
  3. Fry the Dandelions:
    • Heat about 1/2 inch of oil in a deep skillet over medium heat until it reaches around 350°F (175°C).
    • Dip each dandelion flower into the batter, making sure it is fully coated.
    • Carefully place the battered flowers into the hot oil, frying them in batches to avoid overcrowding.
    • Fry each side for about 2-3 minutes, or until golden brown and crispy.
    • Remove the fried dandelions from the oil and drain them on a paper towel-lined plate.
