Ingredients:

For the Avocado:

  • ¼ teaspoon garlic powder
  • Pinch of salt

To Assemble:

  • 8 small corn or flour tortillas
  • Fresh cilantro leaves, for garnish
  • Optional toppings: hot sauce, sliced jalapeños, crumbled queso fresco

Instructions:

  1. Prepare the Avocados: Heat about 1 inch of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C). Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with chili powder, garlic powder, and salt.
  2. Bread the Avocado Slices: Dip each avocado wedge into the flour, then the beaten egg, and finally coat it in the panko mixture. Press gently to adhere the breadcrumbs.
  3. Fry the Avocados: Fry the breaded avocado slices in batches for 2-3 minutes per side or until golden brown. Transfer to a paper towel-lined plate to drain.

  6. Assemble the Tacos: Warm the tortillas in a dry skillet or microwave. Add a few fried avocado slices to each tortilla, top with the slaw, drizzle with lime crema, and garnish with fresh cilantro and any additional toppings of choice.
