FRESH CUCUMBER SALAD

Fresh Cucumber Salad is a light and refreshing dish that’s perfect for summer or as a healthy side to any meal. With crisp cucumbers, tangy vinegar, and a hint of sweetness, this salad is quick to make and pairs well with grilled meats, sandwiches, or on its own for a refreshing snack.

Ingredients:

  • 2 large cucumbers, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup fresh dill, chopped (optional)
  • ¼ cup white vinegar (or apple cider vinegar)
  • 2 tablespoons olive oil
  • 1 tablespoon sugar or honey (optional, adjust to taste)
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice (optional, for extra tang)

Instructions:

  1. Prepare the cucumbers and onions:
    • Thinly slice the cucumbers and red onion and place them in a large bowl. If you prefer, you can peel the cucumbers or leave the skin on for extra crunch and color.
  2. Make the dressing:
    • In a small bowl, whisk together the vinegar, olive oil, sugar (or honey), lemon juice (if using), salt, and pepper. Taste and adjust seasoning as needed.
  3. Toss the salad:
    • Pour the dressing over the sliced cucumbers and onions. Add the chopped fresh dill if using, and toss everything together until well combined.
  4. Chill and serve:
    • Let the salad sit for about 10-15 minutes to allow the flavors to meld. Serve chilled or at room temperature.
