They’re ideal for a weekend brunch, a special breakfast, or even a quick snack. Paired with syrup for dipping, these French Toast Roll Ups will quickly become a family favorite.

Ingredients:

  • 8 slices of white or whole wheat sandwich bread (crusts removed)
  • 1/4 cup cream cheese, Nutella, or peanut butter (for filling)
  • 1/2 cup fresh fruit (e.g., sliced strawberries, bananas, or blueberries)
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter (for frying)
  • Maple syrup (for dipping, optional)

Instructions:

  1. Prepare the Bread:
Flatten each slice of bread with a rolling pin to make it thin and pliable. This will make rolling easier.
  2. Add Filling:
Spread a thin layer of cream cheese, Nutella, or peanut butter over one side of each bread slice. Add a small amount of fruit near one edge of the bread.
  3. Roll Up:
Starting from the edge with the fruit, tightly roll the bread into a log. Repeat with all slices.
  4. Prepare the Egg Mixture:
In a shallow dish, whisk together the eggs, milk, and vanilla extract until well combined.
  5. Cinnamon Sugar Coating:
In a separate dish, mix the sugar and cinnamon. Set aside.
  6. Cook the Roll Ups:
Heat the butter in a large skillet over medium heat. Dip each roll up into the egg mixture, coating it completely, then place it in the skillet seam-side down. Cook for about 2–3 minutes on each side or until golden brown.
  7. Coat in Cinnamon Sugar:
Once cooked, roll each French Toast Roll Up in the cinnamon sugar mixture while still warm.
  8. Serve:
Serve immediately with a side of maple syrup for dipping, if desired. Enjoy!

Tips:

  • Get creative with fillings; try jams, chocolate chips, or savory options like ham and cheese.
  • For a crispy texture, use stale bread or lightly toast the slices before assembling.
