French Quarter Beignets Recipe

  • 4 cups all-purpose flour
  • ½ tsp salt

Instructions:

  1. Activate the yeast: In a small bowl, combine the warm water, yeast, and 1 tablespoon of sugar. Let it sit for 5-10 minutes until the mixture becomes frothy.
  2. Prepare the dough: In a large mixing bowl, whisk together the eggs, milk, melted butter, and remaining sugar. Stir in the yeast mixture. Gradually add the flour and salt, mixing until a soft dough forms.
  3. Knead and rise: Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1-1.5 hours, or until it doubles in size.
  4. Shape the beignets: After the dough has risen, punch it down and roll it out on a floured surface to about ¼-inch thickness. Cut the dough into 2-inch squares.
  5. Heat the oil: In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
