FREEZER BURRITOS

Ingredients:

  • 1 pound ground beef, chicken, or turkey
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 cup cooked rice (white, brown, or Spanish rice)
  • 1 (15 oz) can black beans or pinto beans, drained and rinsed
  • 1 cup corn kernels (optional)
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup salsa or diced tomatoes with green chilies
  • 8 large flour tortillas
  • Optional: sour cream, guacamole, chopped cilantro, diced onions, jalapeños

Instructions:

  1. Cook the meat: In a large skillet, cook the ground meat over medium heat until fully browned. Drain any excess fat. Add the taco seasoning and a bit of water according to the seasoning packet instructions. Stir well and cook for another 2-3 minutes until the seasoning is well incorporated.
  2. Prepare the filling: In a large mixing bowl, combine the cooked meat, cooked rice, beans, corn (if using), shredded cheese, and salsa. Mix until all ingredients are evenly distributed.
  3. Assemble the burritos: Lay out each tortilla on a flat surface. Spoon about 3/4 cup of the filling mixture into the center of each tortilla. Fold in the sides, then roll up the burrito tightly from the bottom to the top.
  4. Wrap for freezing: Wrap each burrito tightly in aluminum foil or plastic wrap. Place the wrapped burritos in a single layer in a large freezer-safe bag or container. Label and date the bag before placing it in the freezer.
  5. Freeze: Freeze the burritos for up to 3 months.
  6. Reheat: To reheat, remove the foil or plastic wrap and microwave the burrito for 2-3 minutes, turning halfway through, until heated through. Alternatively, you can reheat the burrito in the oven at 350°F (175°C) for about 25-30 minutes, or until hot and crispy.
