Flour Tortilla

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ¼ cup lard, shortening, or vegetable oil
  • ¾ cup warm water

Instructions:

  1. In a large mixing bowl, whisk together the flour, salt, and baking powder.
  2. Add the lard (or shortening or oil) and use your fingers to mix it into the flour until the mixture resembles coarse crumbs.
  3. Slowly pour in the warm water, mixing with your hands or a wooden spoon, until a dough forms.
  4. Transfer the dough to a lightly floured surface and knead for 3-4 minutes, until smooth and elastic. Cover with a damp cloth and let it rest for about 30 minutes.
  5. Divide the dough into 10-12 equal portions and roll each into a ball. Using a rolling pin, roll each ball into a thin circle, about 6-8 inches in diameter.
  6. Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for 1-2 minutes on each side, or until bubbles form and the tortilla develops light brown spots.
  7. Remove from the skillet and keep warm by wrapping the tortillas in a clean kitchen towel. Serve immediately or store for later use.
