Ingredients

  • 1 lb ground beef (or turkey)
  • 4 oz bacon, chopped
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (8 oz) tomato sauce
  • 1 tablespoon tomato paste
  • 2 tablespoons chili powder (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper to taste
  • 1-2 jalapeños, diced (optional, for added heat)
  • Fresh cilantro or green onions (for garnish)

Instructions

  1. Cook the Bacon: In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
  2. Sauté the Vegetables: Add the diced onion and bell pepper to the pot. Sauté for about 5 minutes, or until the vegetables are softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Brown the Meat: Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  4. Add Remaining Ingredients: Stir in the diced tomatoes, kidney beans, black beans, tomato sauce, tomato paste, cooked bacon, chili powder, cumin, smoked paprika, cayenne pepper (if using), jalapeños (if using), and salt and pepper. Mix well to combine.
  5. Simmer the Chili: Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for at least 30-45 minutes, stirring occasionally to prevent sticking. For even better flavor, let it simmer for 1-2 hours if time allows.
  6. Serve: Taste and adjust the seasoning if necessary. Ladle the chili into bowls and garnish with fresh cilantro or green onions.

This Firehouse Chili is a comforting and flavorful dish that warms you from the inside out, making it a perfect choice for gatherings, cold nights, or simply when you’re craving a hearty meal!
