Ingredients:

  • 1 lb chorizo sausage, casing removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup canned black beans, drained and rinsed
  • 1 (20 oz) package frozen hash browns, thawed
  • 10 large eggs
  • 1/2 cup milk
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped (optional, for garnish)
  • Salsa and sour cream (optional, for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or a little olive oil.
  2. Cook the Chorizo: In a large skillet, heat the olive oil over medium heat. Add the chorizo sausage and cook, breaking it up into crumbles, until browned and cooked through, about 5-7 minutes. Use a slotted spoon to remove the chorizo from the skillet and transfer it to a paper towel-lined plate to drain.
  3. Sauté the Vegetables: In the same skillet, add the diced onion and bell peppers. Sauté for 3-4 minutes until the vegetables are softened. Stir in the black beans and cook for another 2 minutes. Remove from heat.
  4. Layer the Hash Browns: Spread the thawed hash browns evenly over the bottom of the prepared baking dish. Top with the cooked chorizo and the sautéed vegetables and black beans.
  5. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, cumin, chili powder, salt, and black pepper until well combined. Pour the egg mixture evenly over the ingredients in the baking dish.
  6. Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  7. Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the cheese is melted and bubbly. A knife inserted into the center should come out clean.
  8. Garnish and Serve: Remove the Fiesta Breakfast Bake from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro. Serve with salsa and sour cream on the side, if desired.

Enjoy this Fiesta Breakfast Bake as a delicious and hearty start to your day. Its combination of spicy chorizo, colorful veggies, and cheesy goodness makes it a festive and flavorful dish that everyone will love!
