This recipe combines oats, nuts, seeds, and dried fruit with a touch of honey and a hint of cinnamon, offering a delicious and nutritious option for your mornings. Ingredients:

  • 3 cups rolled oats
  • 1 cup mixed nuts (almonds, pecans, walnuts)
  • ½ cup sunflower seeds or pumpkin seeds
  • ½ cup shredded coconut (optional)
  • ¼ cup honey or maple syrup
  • ¼ cup coconut oil (or vegetable oil)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ½ cup dried fruit (raisins, cranberries, or apricots)

Instructions:

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, nuts, seeds, shredded coconut (if using), cinnamon, and salt.
  3. In a small saucepan, melt the coconut oil over low heat, then stir in the honey or maple syrup and vanilla extract.
