Esquites Recipe
Ingredients:
- 4 cups fresh corn kernels (about 6 ears of corn)
- 2 tablespoons butter
- 1/4 cup mayonnaise
- 1/4 cup Mexican crema or sour cream
- 1/4 cup crumbled Cotija cheese (or feta as a substitute)
- 1/2 teaspoon chili powder (plus more for garnish)
- 1/4 teaspoon smoked paprika
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
- Optional: diced jalapeño for heat
Instructions:
- Prepare the Corn: If using fresh corn, cut the kernels off the cob. You can also use frozen corn if fresh is not available.
