Ingredients:

  • 1 whole chicken (4-5 pounds)
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 3 lemons (2 for juicing, 1 for stuffing)
  • 4 garlic cloves, minced
  • 1 tablespoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped
  • 1/2 cup chicken broth

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven.
  2. Prepare the Chicken: Remove the giblets from the chicken and pat it dry with paper towels. Place the chicken on a rack in a roasting pan.
  3. Make the Marinade: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, pepper, rosemary, thyme, and parsley.
  4. Stuff the Chicken: Cut one lemon in half and place both halves inside the cavity of the chicken. Tuck the wings underneath the bird.
  5. Coat the Chicken: Pour the marinade over the entire chicken, making sure to coat it thoroughly, especially under the skin. Use your hands to rub the marinade into the chicken to ensure even distribution.
  6. Roast the Chicken: Pour the chicken broth into the bottom of the roasting pan. Roast the chicken for 1 hour and 20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy. Baste the chicken with the pan juices every 20 minutes to keep it moist.
  7. Let It Rest: Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Squeeze the roasted lemon halves over the chicken for an extra burst of flavor.
