EGGPLANT DIP

Eggplant Dip, commonly known as Baba Ghanoush, is a smoky and creamy Middle Eastern spread made from roasted eggplants. Blended with tahini, garlic, lemon juice, and olive oil, this dip is packed with rich, earthy flavors and a silky texture. It’s a versatile dish that can be served as an appetizer with pita bread, crackers, or fresh vegetables, or as a flavorful accompaniment to grilled meats. The charred eggplant gives it a unique depth of flavor that’s both rustic and refined, making it a favorite for casual snacking or elegant entertaining.

Ingredients:

  • 2 medium eggplants
  • 2 tbsp tahini
  • 2 tbsp olive oil (plus extra for serving)
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (adjust to taste)
  • 1/2 tsp ground cumin
  • Salt, to taste
  • 1 tbsp fresh parsley or cilantro, chopped (optional, for garnish)
  • Smoked paprika or pomegranate seeds (optional, for garnish)

Instructions:

  1. Prepare the Eggplants: Preheat your oven to 425°F (220°C) or set a grill to medium-high heat. Prick the eggplants all over with a fork to prevent them from bursting. Roast or grill the eggplants for 30-40 minutes, turning occasionally, until the skin is charred and the flesh is soft.
  2. Cool and Peel: Once cooked, let the eggplants cool slightly. Cut them open and scoop out the flesh, discarding the charred skin. Place the flesh in a colander to drain excess liquid for 10-15 minutes.
  3. Blend the Dip: Transfer the drained eggplant flesh to a food processor or mixing bowl. Add tahini, olive oil, garlic, lemon juice, cumin, and a pinch of salt. Blend until smooth, or mash with a fork for a chunkier texture. Adjust seasoning with more lemon juice or salt as desired.
  4. Serve: Transfer the eggplant dip to a serving bowl. Drizzle with olive oil and garnish with fresh parsley, smoked paprika, or pomegranate seeds, if desired.
  5. Enjoy: Serve at room temperature with pita bread, crackers, or fresh veggies like cucumber and carrots.
