Ingredients

  • 6 hard-boiled eggs, peeled

  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp chili powder (optional)
  • 1/2 tsp ground cumin
  • 1/2 cup water or as needed
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. Prepare the eggs: Slice the boiled eggs in half and set them aside.
  2. Sauté the onions: Heat oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the chopped onions and sauté for 5-7 minutes until golden brown.
  3. Add garlic and ginger: Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
  4. Cook the spices: Add the turmeric, ground coriander, cumin, garam masala, and chili powder (if using). Stir and cook for 1-2 minutes to toast the spices and enhance their flavors.
  5. Add the tomatoes: Stir in the chopped tomatoes or tomato puree, and cook for 5-7 minutes until the mixture thickens and the oil starts to separate from the masala.
  6. Add water and simmer: Pour in the water and stir well. Let the gravy simmer for 5 minutes, allowing the flavors to meld together. Adjust the consistency by adding more water if necessary.
  7. Add the eggs: Gently place the boiled eggs into the masala, spooning the gravy over them. Let the eggs simmer in the sauce for 3-4 minutes to absorb the flavors.
  8. Garnish and serve: Garnish with fresh cilantro and serve hot with rice, naan, or roti.
