Egg Bread, also known as milk bread or brioche, is a soft, tender loaf enriched with eggs and butter, giving it a rich, slightly sweet flavor and a fluffy, golden crumb. Instructions

  1. Activate the yeast: In a small bowl, mix the warm water, yeast, and a pinch of sugar. Let it sit for 5-10 minutes until foamy and activated.
  2. Mix the dough: In a large mixing bowl, combine the flour, sugar, and salt. Add the yeast mixture, warm milk, eggs, and melted butter. Stir until a dough forms.
  3. Knead the dough: Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. You can also use a stand mixer with a dough hook for about 5-7 minutes.
  4. First rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
  5. Shape the dough: Punch down the dough and shape it into a loaf. Place the loaf in a greased 9×5-inch loaf pan.
  6. Second rise: Cover the dough with a towel and let it rise again for 30-45 minutes until it puffs up above the edge of the pan.
  7. Preheat the oven: Preheat your oven to 350°F (175°C).
  8. Egg wash and bake: Brush the top of the loaf with the beaten egg for a glossy finish. Bake for 25-30 minutes until the bread is golden brown and sounds hollow when tapped on the bottom.
  9. Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
