Edamame Guacamole

This vibrant twist on traditional guacamole combines creamy avocado with the slightly nutty flavor of edamame for a nutrient-packed dip that’s perfect for any occasion. The edamame adds a subtle texture and boosts the protein content, making it not only a delicious snack but also a satisfying one. With the usual zing of lime, fresh cilantro, and a little heat from jalapeño, this guacamole is a crowd-pleaser with a fun, modern spin.

Ingredients:

  • 1 cup shelled edamame (cooked and cooled)
  • 2 ripe avocados, peeled and pitted
  • 1/4 cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and finely chopped
  • 1 small red onion, finely diced
  • 1-2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional: 1 small tomato, diced

Instructions:

  1. Blend the Edamame: In a food processor, pulse the edamame until roughly mashed. You can also mash them by hand with a fork if you prefer a chunkier texture.
