Duchess Potatoes

Duchess potatoes are an elegant and flavorful side dish made from creamy mashed potatoes that are piped into beautiful, golden swirls and baked to perfection. With their crisp, buttery exterior and soft, fluffy interior, they bring a touch of sophistication to any meal. Ingredients:

  • 2 lbs russet potatoes, peeled and chopped
  • 4 tbsp butter, softened
  • ½ cup heavy cream
  • 3 large egg yolks
  • Salt and pepper, to taste
  • ¼ tsp ground nutmeg (optional)
  • 1 egg, beaten (for brushing)

Instructions:

  1. Cook the potatoes: Place the peeled and chopped potatoes in a large pot of salted water. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until the potatoes are tender. Drain well.
  2. Mash the potatoes: In a large bowl, mash the potatoes until smooth and lump-free. Add the softened butter, heavy cream, egg yolks, salt, pepper, and nutmeg (if using). Mix well until the potatoes are creamy and fully combined.
  3. Pipe the potatoes: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Transfer the mashed potatoes to a piping bag fitted with a large star tip. Pipe the potatoes into swirls or rosettes onto the prepared baking sheet.
  4. Brush and bake: Lightly brush the piped potatoes with the beaten egg to give them a beautiful golden-brown color as they bake. Bake for 15–20 minutes, or until the tops are golden and crisp.
  5. Serve: Once baked, serve the duchess potatoes hot as an elegant side dish.
