Dhal

Dhal, a staple in Indian cuisine, is a comforting and flavorful dish made from split lentils simmered with aromatic spices. It is hearty, nutritious, and can be enjoyed on its own or as an accompaniment to rice or flatbreads. The key to a great dhal lies in the slow cooking process that allows the lentils to break down and absorb the deep flavors of cumin, turmeric, garlic, and ginger. Ingredients:

  • 1 cup red lentils (or yellow lentils)
  • 4 cups water
  • 1 tablespoon vegetable oil or ghee
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 small green chili, chopped (optional)
  • 1 teaspoon salt (to taste)
  • 1 teaspoon garam masala (optional)
  • Fresh cilantro for garnish
  • Lemon wedges for serving

Instructions:

  1. Rinse the lentils: Place the lentils in a bowl and rinse them under cold water until the water runs clear. Drain and set aside.
  2. Cook the lentils: In a large pot, combine the rinsed lentils and water. Bring to a boil, then reduce the heat to low and simmer, uncovered, for about 20-25 minutes, stirring occasionally, until the lentils are soft and have broken down. Skim off any foam that forms on the surface.
  3. Prepare the spice mixture: While the lentils are cooking, heat the oil or ghee in a separate pan over medium heat. Add the cumin seeds and fry for about 30 seconds, until they become fragrant. Add the chopped onion, garlic, and ginger, and sauté for about 5-7 minutes until the onion is golden brown.
  4. Add spices: Stir in the ground turmeric, ground coriander, ground cumin, and green chili (if using). Cook for another 1-2 minutes to let the spices bloom.
  5. Combine with lentils: Once the lentils are fully cooked, add the onion and spice mixture to the pot of lentils. Stir well to combine. Season with salt and garam masala (if using), and cook for an additional 5-10 minutes to allow the flavors to meld.
  6. Garnish and serve: Remove from heat and garnish with fresh cilantro. Serve hot with lemon wedges on the side, along with rice or naan bread.
