  • 2 cups cooked ham, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup potatoes, peeled and diced
  • 1 cup carrots, peeled and diced
  • 1 cup frozen peas
  • 1 tbsp olive oil
  • 3 tbsp all-purpose flour
  • 1 cup milk
  • 1/2 cup chicken broth
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese

For the Egg Wash:

  • 1 large egg
  • 1 tbsp milk

Instructions:

  1. Prepare the Crust:
    • In a large mixing bowl, combine the flour and salt. Cut in the chilled butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
    • Gradually add ice water, a tablespoon at a time, mixing until the dough starts to come together. Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Make the Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the chopped onion, garlic, potatoes, and carrots. Sauté for about 5-7 minutes, or until the vegetables start to soften.

  3. Assemble the Pie:
    • Preheat the oven to 375°F (190°C).
    • Roll out one disk of dough on a lightly floured surface to fit a deep-dish pie pan. Carefully transfer the dough to the pie pan, pressing it into the bottom and sides.
    • Pour the ham and vegetable filling into the crust, spreading it out evenly.
    • Roll out the second disk of dough to cover the pie. Place it over the filling, trimming any excess dough. Crimp the edges to seal and cut a few small slits in the top crust to allow steam to escape.
  4. Apply the Egg Wash:
    • In a small bowl, whisk together the egg and milk. Brush the top crust with the egg wash to help it brown and become golden.
  5. Bake the Pie:
    • Place the pie in the preheated oven and bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
