Ingredients:

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 6-8 tablespoons ice water

For the filling:

  • 2 cups cooked ham, diced
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/2 cup frozen peas
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Make the crust: In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Divide the dough into two discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the filling: In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots, and sauté until softened, about 5-7 minutes. Stir in the flour and cook for another minute.
  3. Gradually whisk in the milk and chicken broth, cooking and stirring until the mixture thickens and comes to a simmer. Stir in the ham, peas, thyme, salt, and pepper. Remove from heat and let the filling cool slightly.
  4. Assemble the pie: Preheat your oven to 375°F (190°C). Roll out one disc of dough on a lightly floured surface and fit it into a deep-dish pie pan. Pour the ham filling into the crust.
  5. Roll out the second disc of dough and place it over the filling. Trim the edges, crimp them to seal, and cut a few slits in the top crust to allow steam to escape.
  6. Bake the pie for 35-40 minutes, or until the crust is golden brown and the filling is bubbling. If the edges of the crust start to brown too quickly, cover them with foil.
  7. Let the pie cool for a few minutes before slicing and serving.

Enjoy your Deep-Dish Ham Pie, a comforting and delicious meal that’s perfect for any occasion!
