Date Squares

Date Squares are a classic, comforting treat that brings together the natural sweetness of dates with a buttery, oat-filled crust and topping. This simple yet delicious dessert is a nostalgic favorite, with its combination of tender dates, warm spices, and a crumbly, oat-based dough. The dates are simmered with a touch of brown sugar and lemon juice to create a thick, caramelized filling that pairs perfectly with the slightly nutty, chewy oat crust. These squares are ideal for snacking, gifting, or serving at gatherings, as they’re easy to make and loved by all ages. Whether enjoyed with a cup of tea or as a sweet treat on their own, Date Squares offer a perfect balance of sweetness, texture, and richness.

Ingredients:

For the Date Filling:

  • 2 cups (about 12 oz) pitted dates, chopped
  • 1 cup (240 ml) water
  • 1/4 cup (50g) brown sugar
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)

For the Crust and Topping:

  • 1 1/2 cups (150g) rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup (115g) unsalted butter, melted

Instructions:

1. Prepare the date filling:

In a medium saucepan, combine the chopped dates, water, brown sugar, lemon juice, and cinnamon and nutmeg (if using). Bring to a simmer over medium heat, stirring occasionally. Let the mixture cook for about 10-12 minutes, or until the dates have softened and the liquid has thickened into a syrupy consistency. Stir frequently to ensure the dates don’t stick to the pan. Once done, remove from heat and set aside to cool.

2. Make the crust and topping:

In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking soda, salt, and cinnamon. Stir until well mixed. Pour in the melted butter and stir until the mixture becomes crumbly and starts to come together. You should have a mixture that’s easy to press into the pan but still has a bit of texture.

3. Assemble the date squares:

Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch (20×20 cm) baking pan with parchment paper. Press about 2/3 of the oat mixture into the bottom of the pan to form a base. Spread the cooled date filling evenly over the oat crust. Then, crumble the remaining 1/3 of the oat mixture over the top of the date filling, covering it evenly.

4. Bake the squares:

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbling. The crust should be firm to the touch, and the edges may begin to slightly pull away from the sides of the pan.

5. Cool and slice:

Allow the Date Squares to cool completely in the pan on a wire rack. Once cool, cut into squares or bars. These squares are easier to slice when they’ve had time to set and firm up.

6. Serve and enjoy:

Serve your Date Squares at room temperature, or store them in an airtight container at room temperature for up to a week. They also freeze well, making them a great make-ahead option.
