DAFFODIL CAKE

Daffodil Cake is a light and airy dessert that beautifully combines the delicate flavors of angel food cake with a subtle hint of citrus. Its two-tone appearance comes from alternating layers of white and yellow batter, reminiscent of the cheerful daffodil flower. The cake’s fluffy texture is achieved by folding beaten egg whites into the batter, resulting in a cake that is both elegant and delightful. Ingredients:

  • 1 cup cake flour
  • 1 1/2 cups sugar, divided
  • 12 egg whites, room temperature
  • 6 egg yolks
  • 1 1/2 tsp cream of tartar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • Yellow food coloring (optional)

Instructions:

  1. Preheat the oven: Set your oven to 350°F (175°C).
  2. Sift dry ingredients: In a medium bowl, sift together the cake flour and 3/4 cup of sugar. Set aside.
  3. Beat the egg whites: In a large mixing bowl, beat the egg whites with cream of tartar and salt until soft peaks form. Gradually add the remaining 3/4 cup of sugar, 1 tablespoon at a time, beating until stiff peaks form.
  4. Divide the batter: Gently fold the flour mixture into the egg whites. Once fully combined, divide the batter into two equal portions.
  5. Prepare the yolk mixture: In a separate bowl, beat the egg yolks until thick and pale. Add vanilla extract and lemon extract. To one portion of the egg white batter, gently fold in the egg yolk mixture, along with a few drops of yellow food coloring if desired, to achieve a yellow batter.
  6. Layer the cake: Pour alternating spoonfuls of the white and yellow batters into an ungreased tube pan. Swirl lightly with a knife for a marbled effect, if desired.
  7. Bake: Bake for 35-40 minutes, or until the cake springs back when lightly touched. Invert the pan and let the cake cool completely.
  8. Serve: Once cool, gently loosen the edges and remove the cake from the pan. Dust with powdered sugar or frost with your favorite icing if desired.
