Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper (optional for heat)
  • 1 lb parsnips, peeled and chopped
  • 1 large carrot, peeled and chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk (or heavy cream for a richer version)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Sauté the aromatics: Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened. Stir in the garlic and ginger and cook for another minute.
  2. Add the spices: Stir in the curry powder, cumin, coriander, and cayenne pepper (if using). Cook for 1-2 minutes to toast the spices, allowing them to become fragrant.
  3. Cook the vegetables: Add the chopped parsnips and carrot to the pot, stirring to coat the vegetables with the spices. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the parsnips and carrots are tender.
  4. Blend the soup: Once the vegetables are soft, use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until creamy.
  5. Add the coconut milk: Stir in the coconut milk and season the soup with salt and pepper to taste. Heat through for a few more minutes.
  6. Serve: Ladle the soup into bowls and garnish with fresh cilantro, if desired. Serve with crusty bread for dipping.

This Curried Parsnip Soup is a delightful combination of sweet and spicy, offering a warm and satisfying meal that’s perfect for fall and winter.
