Crockpot Meatloaf

Crockpot Meatloaf is a comforting, hands-off version of the classic dish, made even easier by using the slow cooker. This juicy meatloaf is seasoned with onions, garlic, and a blend of spices, and it stays incredibly moist as it cooks. Topped with a tangy ketchup glaze that caramelizes beautifully, this crockpot meatloaf is perfect for busy weeknights when you want a hearty, homemade meal without the fuss. Ingredients:

  • 1 ½ lbs ground beef (or a mix of beef and pork)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs
  • 1 egg, beaten
  • ½ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme
  • ½ tsp smoked paprika

For the Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard
  • 1 tsp Worcestershire sauce

Instructions:

  1. Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, diced onion, garlic, breadcrumbs, beaten egg, milk, Worcestershire sauce, salt, pepper, thyme, and smoked paprika. Mix gently until everything is just combined—be careful not to overmix to keep the meatloaf tender.
  2. Form the Meatloaf: Shape the mixture into a loaf and place it in the bottom of your crockpot. If you prefer, you can line the bottom with parchment paper or foil to help lift the meatloaf out when it’s done.
  3. Make the Glaze: In a small bowl, mix together the ketchup, brown sugar, mustard, and Worcestershire sauce. Spread half of the glaze over the top of the meatloaf, reserving the other half for later.
  4. Cook the Meatloaf: Cover the crockpot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf reaches an internal temperature of 160°F (71°C).
  5. Add Extra Glaze and Serve: During the last 30 minutes of cooking, spread the remaining glaze on top of the meatloaf. When done, carefully lift the meatloaf out of the crockpot and let it rest for a few minutes before slicing.
