  • 1 ½ cups heavy cream
  • 1 ½ cups milk
  • 4 tablespoons butter, cut into small pieces
  • 3 cloves garlic, minced

  • ½ teaspoon black pepper

  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  2. Layer the Potatoes and Onion: Place a layer of potato slices on the bottom of the crock pot, followed by a layer of sliced onions. Sprinkle some of the cheddar cheese and Parmesan cheese over the top. Repeat the layers until all the potatoes, onions, and cheese are used, ending with a cheese layer.
  3. Make the Cream Mixture: In a medium bowl, whisk together the heavy cream, milk, minced garlic, salt, pepper, and paprika.
  4. Add the Cream Mixture: Pour the cream mixture evenly over the layered potatoes and cheese in the crock pot. Dot the top with small pieces of butter.
  5. Cook: Cover the crock pot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the cheese is melted and bubbly.
  6. Serve: Once done, sprinkle the scalloped potatoes with fresh parsley for a pop of color and extra flavor if desired. Serve hot as a side dish to your favorite main course.
