CROCK POT CORNED BEEF AND CABBAGE

Crock Pot Corned Beef and Cabbage is a classic, hearty dish perfect for St. Patrick’s Day or any time you’re craving a comforting, traditional meal. Slow-cooked in the crock pot, the corned beef becomes melt-in-your-mouth tender, while the cabbage, carrots, and potatoes soak up the rich flavors of the seasoned broth. Ingredients

  • 3-4 lb corned beef brisket (with spice packet included)
  • 4 cups water or beef broth
  • 1 tablespoon whole grain mustard
  • 2 bay leaves
  • 1/2 teaspoon black peppercorns
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 lb carrots, peeled and cut into large chunks
  • 1 lb baby potatoes, halved
  • 1 small head green cabbage, cut into wedges
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Corned Beef: Place the corned beef brisket into the crock pot, fat side up. Sprinkle the spice packet over the top of the brisket.
  2. Add the Aromatics: Pour in the water or beef broth, making sure the brisket is mostly covered. Add the whole grain mustard, bay leaves, black peppercorns, onion, and garlic to the crock pot.
  3. Cook the Beef: Cover and cook on low for 8-10 hours, or on high for 4-5 hours, until the corned beef is tender and easily pierced with a fork.
  4. Add the Vegetables: About 2 hours before the end of the cooking time, add the carrots and baby potatoes to the crock pot. Push them down around the corned beef so they are submerged in the broth. Add the cabbage wedges on top.
  5. Finish Cooking: Continue cooking on low for the remaining time until the vegetables are tender.
  6. Serve: Once everything is cooked, remove the corned beef from the crock pot and let it rest for 10 minutes before slicing. Serve the corned beef with the cabbage, carrots, and potatoes, and garnish with fresh parsley.
