- 4 lbs pork shoulder (boneless or bone-in), trimmed of excess fat
- 1 tbsp olive oil
- 1 tbsp salt
- 2 tsp black pepper
- 1 tbsp chili powder
- 2 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper (optional, for heat)
- 1 large onion, quartered
- 4 cloves garlic, smashed
- 1 cup orange juice (freshly squeezed, if possible)
- 1/2 cup lime juice
- 1/2 cup chicken broth
- 2 bay leaves

- Prepare the pork: Rub the pork shoulder with olive oil, then season generously with salt, pepper, chili powder, cumin, smoked paprika, garlic powder, onion powder, and cayenne (if using). Massage the spices into the meat to ensure even coverage.
- Assemble in the Crock Pot: Place the onion and garlic at the bottom of the Crock Pot. Lay the seasoned pork shoulder on top. Pour in the orange juice, lime juice, and chicken broth. Add the bay leaves.
