Ingredients:

  • 2 tablespoons water

Instructions:

  1. Marinate the Chicken: Place the chicken pieces in a bowl and pour the buttermilk over them. Cover and refrigerate for at least 30 minutes, or up to 2 hours, to tenderize and infuse flavor.
  2. Prepare the Breading: In a separate shallow dish, combine the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and black pepper. Mix well.
  3. Set Up Dredging Station: In another bowl, whisk the eggs and water together to create an egg wash.
  4. Coat the Chicken: Remove the marinated chicken from the buttermilk. Dip each chicken piece into the flour mixture, then into the egg wash, and finally back into the flour mixture, pressing lightly to ensure an even coating.
  5. Heat the Oil: In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil to 350°F (175°C). To test, drop a small piece of breading into the oil—it should sizzle immediately.
  6. Fry the Chicken: Fry the chicken pieces in batches, being careful not to overcrowd the pan. Cook each batch for 4-5 minutes, turning occasionally, until the chicken is golden brown and cooked through. Transfer the fried chicken to a plate lined with paper towels to drain any excess oil.
