Creamy Tuscan Garlic Chicken

Creamy Tuscan Garlic Chicken is a restaurant-quality dish that’s simple enough to make at home. It features tender, pan-seared chicken breasts coated in a rich, creamy garlic sauce infused with sun-dried tomatoes, fresh spinach, and a blend of Italian herbs. The sauce, made with heavy cream and Parmesan cheese, is the perfect complement to the succulent chicken, while the vibrant vegetables add both color and flavor. Serve this dish over pasta, rice, or with a side of crusty bread to soak up every last drop of the decadent sauce.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp cornstarch mixed with 1 tbsp water (optional for thickening)
  • ½ cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach leaves
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Fresh parsley, for garnish

Instructions:

  1. Prepare the chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes per side until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  2. Make the sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant. Add the heavy cream, chicken broth, Parmesan cheese, basil, and oregano, stirring until the sauce is well combined. If the sauce is too thin, mix the cornstarch with water and add it to the skillet to thicken.
  3. Add vegetables: Stir in the sun-dried tomatoes and fresh spinach leaves. Allow the spinach to wilt slightly, cooking for about 2-3 minutes.
  4. Combine: Return the cooked chicken breasts to the skillet, coating them with the creamy sauce. Let everything simmer together for an additional 3-5 minutes to meld the flavors.
  5. Serve: Garnish with fresh parsley and serve hot over pasta, rice, or your favorite side dish. Enjoy!
