  • Pinch of salt

For topping:

  • Powdered sugar, for dusting

Instructions

  1. Prepare the crust:
    • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
    • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the flour and salt, mixing until the dough comes together.
    • Press the dough evenly into the prepared baking dish, creating a smooth layer.
    • Bake for 15–20 minutes, or until the edges are lightly golden. Set aside to cool slightly.
  2. Make the filling:
    • In a large bowl, whisk together the eggs and granulated sugar until well combined.

    • Pour the lemon mixture over the warm crust, spreading it evenly.
  3. Bake the bars:
    • Return the dish to the oven and bake for 20–25 minutes, or until the filling is set and no longer jiggles in the center.
    • Remove from the oven and let cool completely at room temperature, then refrigerate for at least 2 hours before cutting.
  4. Finish and serve:
    • Once chilled, use a sharp knife to cut the bars into squares or rectangles.
    • Dust generously with powdered sugar before serving.
