Ingredients:
- 40 saltine crackers (enough to cover the baking sheet)
- 1 cup unsalted butter
- 1 cup light brown sugar, packed
- 2 cups semi-sweet chocolate chips
- Optional toppings: chopped nuts, sprinkles, sea salt
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or aluminum foil, and spray lightly with nonstick cooking spray.
- Arrange the crackers in a single layer on the prepared baking sheet, making sure they are evenly spaced and cover the entire surface.
- Make the toffee: In a medium saucepan, melt the butter and brown sugar over medium heat, stirring constantly. Once the mixture starts to bubble, continue to stir for 3-5 minutes until the mixture thickens into a smooth toffee.
- Pour the toffee over the crackers, spreading it evenly with a spatula so that all the crackers are covered. Be careful, as the toffee is very hot.
- Bake the crackers and toffee in the preheated oven for 5 minutes. The toffee will become bubbly and slightly golden.
- Remove from the oven and immediately sprinkle the chocolate chips over the hot toffee layer. Let them sit for 2-3 minutes to melt.
- Spread the melted chocolate evenly over the toffee layer using a spatula. Add any desired toppings, such as chopped nuts or sprinkles, at this point.
- Let the candy cool: Allow the cracker candy to cool completely at room temperature or in the refrigerator until the chocolate hardens and the toffee sets.
- Break the candy into pieces and serve. Store in an airtight container at room temperature or in the fridge for up to a week.
