  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. If using fresh corn, cook the corn kernels in boiling water for about 3-4 minutes, then drain and let cool. If using canned corn, drain and rinse well.
  2. In a large mixing bowl, combine the corn kernels, diced cherry tomatoes, red bell pepper, red onion, and jalapeño (if using).
  3. Add the chopped cilantro to the bowl.
  4. In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.
  5. Pour the lime dressing over the corn mixture and toss gently to combine all the ingredients.
  6. Taste and adjust seasoning as needed, adding more lime juice, salt, or pepper to your preference.
  7. Cover and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together.
