Ingredients:

  • 4 bone-in, skin-on chicken thighs or breasts
  • 1 1/2 lbs baby potatoes, halved

  • 1 cup dry white wine
  • 1 cup chicken broth

  • 1 tsp dried thyme
  • 1/4 cup olive oil
  • 1 cup frozen peas, thawed
  • Salt and black pepper, to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Sear the Chicken:
    • Season the chicken with salt and black pepper. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken, skin-side down, until golden brown, about 6-7 minutes. Flip and cook for another 3-4 minutes on the other side. Remove the chicken from the skillet and set aside.

  4. Add Wine and Broth:
    • Pour in the white wine and chicken broth, stirring to deglaze the pan. Bring the mixture to a simmer, then return the chicken to the skillet, placing it on top of the potatoes.
  5. Roast in the Oven:
    • Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Add Peas and Finish:
    • In the last 5 minutes of cooking, scatter the peas around the chicken and potatoes. Continue cooking until the peas are warmed through.
  7. Serve:
