Ingredients:

  • 12 large littleneck clams, scrubbed
  • 4 slices bacon, cooked and crumbled

  • 2 cloves garlic, minced
  • 1 small shallot, minced
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat the oven: Preheat your oven to 450°F (230°C) and line a baking sheet with aluminum foil.
  2. Steam the clams: In a large pot, add about 1 inch of water and bring to a boil. Add the clams, cover, and steam for 5-7 minutes, or until the clams open. Discard any clams that do not open. Remove the clams from the pot and allow them to cool slightly. Once cooled, carefully remove the top shell, leaving the clam in the bottom half of the shell. Arrange the clams on the prepared baking sheet.
  3. Prepare the topping: In a small skillet, melt the butter over medium heat. Add the minced garlic and shallot, cooking until fragrant and softened, about 2 minutes. Remove from heat and stir in the breadcrumbs, Parmesan, parsley, lemon juice, paprika, salt, and pepper.
  4. Assemble the clams: Spoon the breadcrumb mixture over each clam, pressing it gently onto the clam meat. Top each clam with a bit of crumbled bacon.
  5. Broil the clams: Place the baking sheet under the broiler and cook for 3-5 minutes, or until the topping is golden brown and crispy.
