Cilantro Lime Rice

Cilantro Lime Rice is a vibrant and flavorful side dish that pairs perfectly with a variety of meals, especially Mexican and Southwestern cuisine. The zesty lime and fresh cilantro give this rice a refreshing twist, while the subtle garlic and fluffy texture make it a versatile complement to tacos, burritos, grilled meats, or vegetables. Light, fragrant, and easy to make, cilantro lime rice adds a pop of brightness to any meal, making it an ideal side to elevate your weeknight dinners or festive gatherings.

Ingredients:

  • 1 cup long-grain white rice
  • 2 cups water or vegetable broth
  • 1 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • Zest and juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • Salt to taste

Instructions:

  1. In a medium saucepan, heat the olive oil or butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the rice and toast it lightly in the oil for 2-3 minutes, stirring frequently.
  3. Pour in the water or broth and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15-18 minutes or until the rice is fully cooked and the liquid is absorbed.
  4. Remove the pot from the heat and let the rice sit, covered, for 5 minutes. Fluff the rice with a fork.
  5. Stir in the lime zest, lime juice, and chopped cilantro, mixing until evenly combined. Taste and adjust the seasoning with more lime juice or salt if needed.
  6. Serve your cilantro lime rice warm as a side dish, and enjoy its fresh, zesty flavors!
