This Chocolate Pudding Pie is rich, creamy, and completely indulgent. It features a smooth chocolate pudding filling nestled in a crisp, buttery crust. Topped with whipped cream, it’s an easy yet elegant dessert that’s perfect for any occasion.

Ingredients:

For the crust:

  • 1½ cups graham cracker crumbs (or chocolate cookie crumbs)
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the chocolate pudding:

  • ¾ cup granulated sugar
  • â…“ cup unsweetened cocoa powder
  • ¼ cup cornstarch
  • Pinch of salt
  • 3 cups whole milk
  • 4 oz semi-sweet or dark chocolate, chopped
  • 1 teaspoon vanilla extract

For the topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Chocolate shavings or curls (for garnish, optional)

Instructions:

Make the crust:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the crust:
    • In a medium bowl, mix the graham cracker crumbs (or chocolate cookie crumbs) with the sugar and melted butter until the mixture resembles wet sand.
  3. Bake the crust:
    • Press the crumb mixture evenly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes, or until the crust is golden and set. Let the crust cool completely before adding the filling.

Make the chocolate pudding:

  1. Prepare the pudding mixture:
    • In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt. Slowly add the milk, whisking constantly to avoid lumps.
  2. Cook the pudding:
    • Place the saucepan over medium heat and cook, whisking constantly, until the mixture begins to thicken and comes to a gentle boil, about 5-7 minutes. Continue cooking for an additional 2 minutes while stirring.
  3. Add the chocolate:
    • Remove the saucepan from the heat and stir in the chopped chocolate and vanilla extract. Whisk until the chocolate is melted and the pudding is smooth.
  4. Cool the pudding:
    • Pour the chocolate pudding into the cooled crust, smoothing the top with a spatula. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming. Chill in the refrigerator for at least 3-4 hours, or until set.

Make the whipped cream topping:

  1. Whip the cream:
    • In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Assemble the pie:
    • Once the pudding is set, remove the pie from the fridge and spread or pipe the whipped cream on top. Garnish with chocolate shavings or curls if desired.
  3. Serve:
    • Slice and enjoy your rich and creamy Chocolate Pudding Pie!

This delicious pie is perfect for satisfying chocolate cravings and makes a show-stopping dessert for any gathering!
