Chocolate Cheesecake Cupcakes

These individual-sized desserts combine a luscious chocolate base with a smooth, tangy cheesecake filling, all in a convenient cupcake form. Ingredients:

For the chocolate base:

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder

  • ¼ tsp salt
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup whole milk

For the cheesecake filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup mini chocolate chips (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Make the chocolate base: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In another bowl, mix the melted butter, sugar, egg, vanilla, and milk until smooth. Gradually add the dry ingredients to the wet ingredients, stirring until combined.
  3. Make the cheesecake filling: In a separate bowl, beat the cream cheese, sugar, egg, and vanilla until smooth and creamy. If desired, fold in the mini chocolate chips.
  4. Assemble the cupcakes: Spoon about 1 tablespoon of the chocolate batter into each cupcake liner, filling them halfway. Add about 1 tablespoon of the cheesecake filling on top of the chocolate base.
  5. Bake: Bake for 18-22 minutes, or until the chocolate layer is set and the cheesecake filling is slightly golden.
  6. Cool and serve: Let the cupcakes cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely. You can refrigerate them for a few hours before serving for an extra firm texture.
