Chipotle Chilaquiles

Chipotle Chilaquiles is a bold and flavorful Mexican dish that’s perfect for breakfast, brunch, or even dinner. This traditional dish features crispy tortilla chips simmered in a smoky chipotle sauce, then topped with a variety of delicious toppings like crumbled cheese, avocado, and fresh cilantro. Ingredients:

  • 8 corn tortillas, cut into triangles
  • 1–2 tbsp vegetable oil (for frying the tortillas)
  • 1 (14 oz) can diced tomatoes
  • 1–2 chipotle peppers in adobo sauce (depending on your heat preference)
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • ½ cup chicken or vegetable broth
  • ¼ cup crumbled queso fresco or feta cheese
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • 2 eggs (optional, for serving)
  • Sour cream or Mexican crema (optional, for serving)
  • Lime wedges (for serving)

Instructions:

  1. Fry the tortilla chips: Heat the vegetable oil in a large skillet over medium heat. Once hot, fry the tortilla triangles in batches until they are golden and crispy, about 2–3 minutes per side. Remove and drain on a paper towel-lined plate. Alternatively, you can bake the tortilla triangles in a 350°F (175°C) oven for 10–12 minutes until crispy.
  2. Make the chipotle sauce: In a blender, combine the diced tomatoes, chipotle peppers, onion, garlic, cumin, smoked paprika, salt, and pepper. Blend until smooth.
  3. Simmer the sauce: In the same skillet, pour in the blended chipotle sauce and simmer for 5 minutes until the sauce thickens slightly. Add the chicken or vegetable broth and stir to combine.
  4. Combine with chips: Gently add the fried tortilla chips to the skillet, tossing them in the sauce until evenly coated. Let them simmer for about 2–3 minutes to absorb the flavors, but still retain some crunch.
  5. Serve: Remove the skillet from the heat and top the chilaquiles with crumbled queso fresco, sliced avocado, fresh cilantro, and any other desired toppings like eggs, sour cream, or lime wedges.
