Chinese Style Steamed Fish

Chinese-style steamed fish is a light and flavorful dish that highlights the delicate taste of fresh fish, traditionally prepared with minimal ingredients to let the natural flavors shine. The fish is gently steamed until tender, then topped with fragrant aromatics like ginger, garlic, and scallions. A light soy-based sauce is poured over, and hot oil is drizzled on top to release a burst of flavors. This dish is often served as part of a family meal, accompanied by steamed rice and other vegetable sides, making it a perfect option for a simple yet elegant dinner.

Ingredients:

  • 1 whole white fish (such as sea bass, snapper, or tilapia), cleaned and scaled
  • 1-inch piece of fresh ginger, thinly sliced
  • 2 garlic cloves, minced
  • 3-4 scallions, julienned
  • 2 tablespoons light soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • Fresh cilantro, for garnish (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the fish: Rinse the fish under cold water and pat dry with paper towels. Make 2-3 diagonal slashes on both sides of the fish to help it cook evenly. Season the fish inside and out with a pinch of salt and pepper.
  2. Set up the steamer: Prepare a steamer by filling a large pot or wok with about 2-3 inches of water. Bring the water to a simmer over medium heat.
  3. Steam the fish: Place the fish on a heatproof plate that will fit inside your steamer. Arrange half of the ginger slices and some of the scallions inside the fish cavity and the rest on top of the fish. Place the plate in the steamer and cover with the lid. Steam for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
  4. Prepare the sauce: While the fish is steaming, combine the soy sauce, Shaoxing wine, and sesame oil in a small bowl.
  5. Heat the oil: In a small pan, heat the vegetable oil over medium heat until it’s hot but not smoking.
  6. Assemble the dish: Once the fish is done steaming, carefully remove the plate from the steamer. Pour the soy sauce mixture over the fish. Sprinkle the julienned scallions and minced garlic on top.
  7. Sizzle with hot oil: Immediately drizzle the hot oil over the scallions and garlic. You’ll hear a satisfying sizzle as the oil brings out the aromatic flavors.
  8. Serve: Garnish with fresh cilantro, if desired, and serve the fish hot with steamed rice.
