Ingredients:

For the Chimichurri Sauce:

  • 1 tbsp fresh lemon juice
  • 1/2 tsp red pepper flakes

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions:

  1. Prepare the Chimichurri Sauce: In a medium bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, lemon juice, red pepper flakes, cumin, and olive oil. Season with salt and pepper, and mix well. Set aside to allow the flavors to meld.
  2. Marinate the Chicken: Pat the chicken breasts dry and season with salt and pepper. Spoon a few tablespoons of chimichurri over the chicken, coating it evenly. Let the chicken marinate for at least 30 minutes (or up to 2 hours for deeper flavor).
  3. Cook the Chicken:
    • If grilling: Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
    • If pan-searing or baking: Heat 2 tbsp of olive oil in a large skillet over medium heat. Cook the chicken for 6-8 minutes per side, or bake in a 400°F (200°C) oven for 20-25 minutes, until fully cooked.
  4. Serve: Slice the cooked chicken and drizzle generously with the remaining chimichurri sauce. Serve with lemon wedges on the side for an extra burst of flavor.
