The tender, caramelized sweet potatoes are filled with a flavorful chili made with ground beef, beans, tomatoes, and a blend of spices, offering a delightful contrast in flavors and textures. Topped with fresh ingredients like sour cream, shredded cheese, and chopped cilantro, this meal is both satisfying and nourishing.

Ingredients:

  • 4 medium sweet potatoes
  • 1 lb ground beef (or turkey for a lighter option)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños, avocado

Instructions:

  1. Preheat the oven to 400°F (200°C). Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Roast for 45-60 minutes, or until tender when pierced with a fork.
  2. Prepare the chili: While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add the diced onions and cook until softened, about 3-4 minutes. Add the garlic and cook for another minute.
  3. Cook the beef: Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and fully cooked, about 6-8 minutes. Drain excess fat if necessary.
  4. Season the chili: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Add the diced tomatoes and black beans, and simmer the mixture for 10-15 minutes, allowing the flavors to meld.
  5. Assemble: Once the sweet potatoes are cooked, slice them open lengthwise and fluff the insides with a fork. Spoon the chili generously over each sweet potato.
  6. Top and serve: Garnish with your favorite toppings such as shredded cheese, sour cream, cilantro, jalapeños, or avocado. Serve hot.

Enjoy this flavorful and filling dish that’s a perfect balance of sweet and spicy!
