  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups salsa verde or red enchilada sauce
  • 1 cup chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 3 cups cooked, shredded chicken
  • 8 oz tortilla chips
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced (for topping)
  • 1/4 cup crumbled queso fresco (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing for 4-5 minutes until softened. Stir in the salsa verde (or enchilada sauce) and chicken broth, and bring the mixture to a simmer.
  3. Layer the casserole: Spread a layer of tortilla chips in the bottom of the casserole dish. Pour a third of the sauce over the chips, then add a layer of shredded chicken, black beans, and cheese. Repeat the layers until all ingredients are used, ending with a layer of sauce and cheese on top.
  4. Bake: Cover the casserole with foil and bake for 20-25 minutes, until the cheese is melted and bubbly.
  5. Garnish and serve: Remove the casserole from the oven and let it cool for a few minutes. Top with sour cream, fresh cilantro, sliced avocado, and queso fresco if desired. Serve warm.
