Chicken Veronique

Chicken Veronique is a classic French dish that beautifully combines tender chicken breasts with a creamy, delicate white wine sauce and the subtle sweetness of grapes. This elegant dish is perfect for special occasions or when you want to elevate your everyday dinner. The combination of flavors is sophisticated yet comforting, making it a delightful addition to any table.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup seedless green grapes, halved
  • 2 tablespoons fresh tarragon, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: fresh tarragon sprigs for garnish

Instructions:

  1. Prepare the chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Cook the chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Make the sauce: In the same skillet, add the white wine and chicken broth, scraping up any browned bits from the bottom. Bring to a simmer and cook for 5 minutes, reducing slightly.
  4. Add the cream: Stir in the heavy cream and lemon juice, and continue to simmer for another 3-4 minutes, or until the sauce thickens slightly.
  5. Finish the dish: Return the chicken breasts to the skillet, spooning the sauce over them. Add the halved grapes and chopped tarragon, and cook for an additional 2-3 minutes, allowing the flavors to meld together.
  6. Serve: Transfer the chicken to a serving platter, spoon the sauce and grapes over the top, and garnish with fresh tarragon sprigs if desired. Serve immediately.
