Chicken Tacos

Instructions:

  1. Prepare the Chicken:
    • In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
    • Rub the spice mixture evenly over the chicken breasts.
    • In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
    • Remove the chicken from the skillet and let it rest for a few minutes. Then, slice or shred the chicken and squeeze lime juice over it.
  2. Warm the Tortillas:
    • In a clean, dry skillet, warm the tortillas over medium heat for about 30 seconds on each side, or until they are pliable and slightly charred. Keep them warm by wrapping them in a clean kitchen towel.
  3. Assemble the Tacos:
    • Fill each tortilla with a portion of the cooked chicken. Top with shredded lettuce, diced tomatoes, red onion, cilantro, cotija cheese, and avocado slices.
  4. Serve:
    • Serve the tacos with lime wedges on the side for an extra burst of flavor. Enjoy immediately.
