CHICKEN SALTIMBOCCA

Ingredients:

  • 1/2 cup dry white wine (like Sauvignon Blanc)

Instructions:

  1. Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to about 1/2-inch thickness. Season both sides with salt and pepper.
  2. Wrap with Prosciutto: Lay 2 slices of prosciutto over each chicken breast, covering as much of the surface as possible. Place 2 sage leaves on top of the prosciutto.
  3. Dredge in Flour: Lightly dredge each chicken breast in flour, shaking off any excess.
