Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 can (15 oz) crushed tomatoes
  • 1/2 cup chicken broth
  • 1/4 cup tomato paste
  • 1/4 cup green olives, sliced
  • 1 tablespoon capers
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Cook the Chicken: In a large pot, bring water to a boil and cook the chicken breasts for 15-20 minutes, or until fully cooked. Remove the chicken from the pot, let it cool slightly, then shred the meat using two forks.
  2. Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell peppers, and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
