Chicken Parmesan Sliders

Ingredients:

  • 12 slider buns (small sandwich rolls)
  • 4 boneless, skinless chicken breasts (or use chicken tenders for smaller sliders)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 cup grated Parmesan cheese
  • 1 ½ cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp olive oil (for frying)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste
  • Butter (for greasing the buns)

Instructions:

  1. Prep the Chicken: If using whole chicken breasts, slice them into smaller pieces to fit the slider buns. Season the chicken pieces with salt, pepper, dried oregano, and basil on both sides.
  2. Bread the Chicken: Set up a breading station: in one shallow bowl, place the flour; in another bowl, beat the eggs; and in a third, combine the breadcrumbs and grated Parmesan cheese. Dredge each piece of chicken first in the flour, then dip it into the egg, and finally coat it in the breadcrumb-Parmesan mixture, pressing lightly to ensure an even coating.
  3. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken pieces and cook for about 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set it aside on a paper towel-lined plate to drain.
  4. Assemble the Sliders: Preheat your oven to 375°F (190°C). Lightly butter the inside of each slider bun. Place the bottom halves of the buns in a baking dish or sheet pan. Place one piece of cooked chicken on each bottom bun. Spoon a tablespoon of marinara sauce over the chicken, then top with a generous amount of shredded mozzarella cheese.
  5. Bake the Sliders: Place the top halves of the slider buns on top of the chicken and cheese. If desired, brush the tops of the buns with a little more butter to help them brown as they bake. Cover the pan with aluminum foil and bake for 10-12 minutes, until the cheese is melted and the sliders are heated through.
  6. Serve: Remove the foil and bake for an additional 2-3 minutes to lightly toast the tops of the buns. Remove from the oven, sprinkle the sliders with fresh parsley, and serve immediately.
