Ingredients:
- 2 cups elbow macaroni
- 2 tablespoons olive oil or butter
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 cups cooked chicken, shredded or diced
- 1 cup frozen peas or mixed vegetables (optional)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 1 ½ cups shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon dried thyme or Italian seasoning
- Salt and pepper to taste
- ½ cup breadcrumbs (optional, for topping)
- 2 tablespoons melted butter (optional, for topping)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- Cook the Macaroni: Cook the macaroni in a large pot of salted boiling water until just al dente. Drain and set aside.
- Sauté Aromatics: In a large skillet, heat olive oil or butter over medium heat. Add the onion and sauté until softened, about 3-4 minutes. Add the garlic and cook for another 30 seconds until fragrant.
- Combine Ingredients: Stir in the cooked chicken, frozen peas or vegetables (if using), cream of chicken soup, and milk. Mix well. Add 1 cup of cheddar cheese, Parmesan cheese, thyme or Italian seasoning, and salt and pepper. Stir until the cheese is melted and the mixture is creamy.
- Mix with Pasta: Combine the cooked macaroni with the chicken mixture and mix thoroughly. Pour into the prepared baking dish, spreading it out evenly.
- Add Cheese and Topping: Sprinkle the remaining ½ cup of cheddar cheese over the top. If using breadcrumbs, mix them with the melted butter and sprinkle evenly over the cheese layer.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbling and the top is golden brown.
- Serve: Let the casserole cool for 5 minutes before serving. Pair with a side salad or crusty bread for a complete meal.
